Maria Eugenia Rodríguez comes from a family with decades of experience and deep-rooted knowledge in coffee cultivation. Her approach is centered on the generation of knowledge and the implementation of regenerative agricultural practices that support life and biodiversity. Currently, María is leading efforts to consolidate the Women Coffee Association and remains active in competitions like the Cup of Excellence. Her goals include maintaining consistency in cup profile and increasing productivity per hectare.
Harvesting is done selectively, based on cherry ripeness, color, and Brix degrees. A process known as “balseo”—a weight-based selection—is used to separate lighter beans, which are processed differently. To standardize fruit color, a meticulous manual selection follows.
Washed lots are depulped and undergo a 72-hour fermentation. Drying takes between 20 and 30 days in parabolic dryers. This is a stellar Chiroso, and one that we are honored to be offering. In the cup we taste notes of red apple, lime, and jasmine.
