Sebastian Ramirez has fast become one of Preface's favorite producers. Having been introduced to his work through our partners Unblended, we have since had our imagination and pallets captivated by his skill as a producer.
The breadth of his portfolio is impressive, from traditional washed processes, to more innovative methods such as carbonic maceration, and expertise in co-fermentation, Ramirez seemingly is a producer that produce all kinds of coffees for all kinds of people.
He is a fourth generation coffee producer, with El Placer mostly functioning as a processing facility as opposed to a traditional coffee farm. This distinction underscores Ramirez' expertise as a processing specialist. These three coffees curated for this anthology showcases the breadth of his skillset, covering the three types of processing most common in the industry.
